Welcome to Vault City! In case you're new here, we make modern sour beers and stouts from our home in Edinburgh, Scotland.
If you've got a can in hand, then you may already know the script. We brew a spectrum of sweet-tart to super sour beers, and our new sour scale is here to act as a guide, showcasing the versatility of what we can do.

Vault City make sour beers almost exclusively. Our specialism sets us apart, and so does our process. Since 2018 we’ve used our house mixed culture, a unique combination of yeast and bacteria strains, in every sour beer we’ve brewed.
Our mixed fermentation base beer is bursting with tropical esters, juicy flavours and deliciously tart acidity. Paired with fresh fruit puree, juices, zests, cake batter, ice cream (and more), we’ve created a scale on each can to find your sweet sour spot with every Vault City release.
