Year 3 - Tropical Sour

In 2018 we set out to challenge perceptions of what beer could be. Almost 500 unique recipes later we’ve packed them with mountains of fruit, chocolate, spices, marshmallow fluff and everything in between.

To celebrate eight years of pushing boundaries, we've revisited the Vault City archives and reimagined eight beers from 2018 to 2025, each with a brand-new twist.

Description

The third beer of our birthday celebration rewinds the clock back to 2020, with a tropical sour recipe from the depths of lockdown. This was one of the final beers we made when cuckoo brewing in Dundee, shortly before returning to our Edinburgh roots at our first ever dedicated brewery site.
A vibrant blend of mandarin, mango and passionfruit pairs perfectly with our house mixed culture creating something unbelievably juicy and refreshing to the very last sip.

ABOUT THE BREWER

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers and decadent stouts in Edinburgh since 2018.  

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.  

You’ll find Vault City Brewing in the seaside suburb of Portobello, Edinburgh, where we brew almost 500,000 litres of beer each year.

Our Edinburgh taproom is home to some of the freshest Vault City beer you’ll ever try. The Wee Vault has more taps than seats, so this cosy Haymarket craft beer bar could be your new favourite place to sample sours, or just a scheduled stop-off before a brisk 2-minute walk to Haymarket train station.
