Vault City x Babyfaced Baker - Double Bun Pastry Sours

Meet our Double Bun Duo.

Created in collaboration with the Edinburgh bakery legends at Babyfaced Baker, this dual release is the next evolution of our doughnut duo pastry sour series. First brewed in 2024, brought back in 2025, and now reimagined (in bun form), these are two of our new favourite pastry sour beers brewed to be enjoyed solo or blended together to create something new.

Babyfaced Baker

Born in Leith and now a firm favourite across Edinburgh, Babyfaced Baker has built a cult following and even opened a second location in Portobello where Vault City's old brewery was based,  often selling out in under 2 hours. Founder Rhiain specialises in silly puns & cinnamon buns (plus chunky stuffed cookies and much more), not to mention her iconic 'Does it Flat White?' series featuring (to our knowledge) the first Irn Bru Flat White. Sounds wild, but trust us and Rhiain, it works. 

Just as importantly, she’s a huge fan of Vault City, craft beer and pastry sours, making this collaboration a perfect match. From the first conversation, we knew we had to bring our worlds together and create something fun and pastry-forward. 

Beers from Buns

We’re always chasing authenticity in the world of modern sour beers, infusing copious amounts of real fruit, chocolate, coffee and even wham bars into our beer, so this felt like a good opportunity to get our buns into action. 

For this collab, we brewed the beers using real buns and dough from Babyfaced Baker that would otherwise be going to waste. On the brew day, Rhiain and the team joined us to load fresh bakes straight into the mash tun.

Lemon Meringue Iced Bun

Zesty, bright, and refreshingly sharp, this is the tarter side of the duo.

Inspired by a classic dessert, expect vibrant lemon acidity balanced with smooth vanilla and soft meringue sweetness. It’s a pastry sour beer that delivers a clean citrus punch with a silky, indulgent finish.

Blueberry Maple Glaze Bun

Richer, rounder, and fruit-forward, this is where maple sweetness takes the lead.

Juicy blueberry notes meet a drizzle of maple glaze, backed by our signature tart sour beer base. The result is a smooth, dessert-inspired sour packed with ripe fruit character and a gentle tang to keep things balanced.

Blending Your Buns

If you know, you know… blending is where things get fun.

Last year, our doughnut duo blend outperformed both individual beers in terms of ratings on Untappd, and we’re expecting the same again. The sharp citrus of the Lemon Meringue pairs perfectly with the deep, juicy sweetness of Blueberry Maple, creating a perfectly balanced pastry sour blend.

With Rhiain’s baking expertise guiding the flavour profiles, this duo was designed to work together as much as apart.
