Vault City's Highest Rated Sours from 2025
With 90 sour beers in our 2025 release calendar (out of a total of 118 beers releases this year!), it’s clear that sours sit at the heart of Vault City! From super thicc smoothies to table beers, decadent desserts and fruit-forward summer sours, we had a lot of fun brewing up new recipes this year (plus a few rebrews thrown in!).

Seven years, seven of our favourite adjuncts, and our highest rated sour beer in 2025. Brewed to celebrate Vault City's 7th birthday, this decadent dessert sour layered creamy coconut, juicy passion fruit, peach, mango, marshmallow, vanilla, and rich cheesecake into something luxuriously thick, fruity, and smooth. Now we just need to find another adjunct to celebrate 8 years in July next year...

Our favourite flavours of ice cream became inspiration once again for our 2025 summer dessert sours, in a series of single, double, and triple scoops…
Layers of juicy strawberries, cherries, raspberries and blackberries are added to a triple serving of smooth vanilla ice cream served in a golden waffle cone with generous toppings of crumbly shortcake biscuit. This one was so good, we brewed it all over again for a Systembolaget listing in Sweden this November!

The mid strength flavour of the series above, with a tropical taste packed into two generous scoops. This sun-drenched sour takes a tropical twist with peach, mango, and passion fruit pairing perfectly with a double helping of smooth vanilla ice cream topped with coconut.

Our Stoopid series of smoothie sours is dedicated to anyone who’s ever asked; “why can’t beer just taste like beer?”, and this birthday variation is no different.
Jam-packed with unfermented fruit for the freshest aromas and flavours, featuring sweet white chocolate among juicy raspberries, cherries, banana, and the tropical taste of creamy coconut. Thicc, juicy and outrageously tasty in every stoopid sip.
#5. Poire Belle Hélène, 5%

Brewed as a French collab, bringing together our Edinburgh brewery and some of France’s finest indie bars and bottle shops including Delirium Caen, Le Chopp’In, Les Herbiers, Starling Burgers, Strasbourg, A La Bière Comme A La Bière, Paris & Le Drunken Bar, Montreuil.
After touring the brewery and graduating from our sour school, our French partners helped co-create this decadent, dessert-inspired sour. Expect poached pears, smooth chocolate, creamy vanilla, and delicate flavours of roasted almonds, a combination inspired by a classic French treat.

The session strength sour of our Marvellous Liquids series, Golden Goose Eggs blends luscious strawberries and raspberries with silky white chocolate and rich caramel, creating a sumptuously smooth sour with a mini egg crunch and a perfect balance of sweet and tart. This decadent delight is worth its weight in gold.

Another release from our 7th birthday making the top 10 list, is our imperial pastry sour; The Whole Cake. Now, if you’re looking for a showstopper, this one takes the cake… Following on from Piece of Cake, our session sour from last year’s 6th birthday celebrations, we’ve gone bigger, bolder, with more slices (and even more jammy Scottish strawberries and raspberries). Each sip finishes with a swirl of creamy vanilla icing, like eating a whole birthday cake to yourself, but with less shame, and no candles required.
#8. Peach & Apricot Pastel de Nata, 4.8%

Inspired by the iconic Portuguese custard tart, this decadent pastry sour layers creamy vanilla with caramelised sugar and a delicate touch of cinnamon. A juicy peach & apricot twist adds a fresh fruitiness to round out each sip. Brewed in collaboration with our Portuguese importer Beer Freaks and Lisbon legends Dois Corvos, this sour beer is sweet, spiced, and packed with flavour.

Another from our Marvellous Liquids series, Dissolving Elixir, one of our thickest smoothie sours ever, is jam-packed with a fruit fusion of blackberries, blueberries, raspberries and a swirl of smooth, creamy vanilla. The mallow-y mouthfeel coats your tongue, dissolving into a potion of pure indulgence.

Finally, in our top ten list, we have a Pitch Black Dessert Sour - Smooth as velvet, black as night. An evolution of our first Black Velvet dessert sour, and still inspired by a traditional red velvet cake, we blended juicy blackberries, cherries, velvety chocolate, smooth caramel and creamy vanilla in every sip.
